Herbed Rice

Simple Herbed Rice Recipe

Ingredients:

3 cups of cooked brown rice (wild rice can be substituted)

1/4 c. Extra Virgin Olive Oil

1/4 c. Fresh chopped Parsley (You must use fresh)

1 T. Butter

1/4 t. Salt

1 t. fresh sqeezed lemon juice (optional)

Directions:
Cook the rice according to package instructions. For brown rice use 2 1/4 c. of water for 1 cup of rice. Bring water to a boil with salt and stir in rice. Let simmer for 45 minutes or until cooked to taste. NOTE: You may need to add more water during the cooking process.

Mix parsely with Olive oil in a microwave safe container. Cook on high for 30 seconds just until the parsley has wilted.

Add lemon juice (optional), Olive Oil Parsley mixture and Butter to the rice. You can add more salt and pepper to taste.

Serve with lots of steamed veggies!

Serves 6. Approx. 210 calories per serving depending on the rice used.

This is a wonderful delicious and healthy dish that I make for my family. It was inspired by an herbed rice dish that I was served in a Persian restaurant.
